5/27/2021 7 Comments Meals for work nightsFor scientists (looking at you, chemists), cooking and baking can seem to be a direct home extension of work. It can be fun to understand the interplay of ingredients (especially when the result is a delicious cake), but mealtimes can also be a source of stress after a longer day at work. I know many of us have turned to meal prepping, which is great, but sometimes I want to change it up! We compiled a few recipes that we have found to be either quick, easy, and/or comforting for a mid-week meal plan. Do you have a good recipe that is easy or brings joy? Please share in the comments! Kristin: My coworker shared this coconut-miso salmon soup recipe with me. It is really quick and super flavorful. We get the salmon trimmings from the grocery store (which are cheap compared to a whole filet) and it is easy to have for leftovers. While the soup is good as is, we also supplement this with a salad and rice. If you are a fellow fish or soup lover, try this out. When I’m in a hurry, I like to make a single dish that includes a carb, a protein, and a vegetable. This recipe combines the simplest no-cooking version of each -- tortilla, canned black beans, and kale. This is a typical dish from Rome. In Italian carbonara means “from cola” and it is thought that the name comes from the amount of pepper in the sauce, which makes it look black. Often, outside of Italy, people think that the only way to make the sauce smooth is to add cream,but that is just wrong as it completely changes the taste and the nutritional values of the dish! This recipe goes very well with red wine. Buon appetito! Ingredients (for 2 servings) 200 g Spaghetti 3 whole eggs, 1 yolk 100 g Guanciale (can be substituted by bacon or pancetta) 50 g Pecorino Romano (can be substituted by parmesan) Salt and pepper to taste Instructions
Simple tips or suggested substitutions of ingredients: Guanciale is the cheek of the pork preserved (often with pepper). It looks a lot like pancetta, but it has a different flavor. You can find it in many Italian shops in North Beach, even during the quarantine (i.e. Montesacro). Pecorino is a typical Roman cheese derived from sheep’s milk. You can find it in supermarkets like Whole Foods and Gus’s Community Market. Christina: I'm sharing my partner’s (another true Italian) pesto recipe, with a twist! Ingredients 100 g unsalted pistachios (without shells) ½ tablespoon parmesan cheese 20 g sliced almonds As much spaghetti pasta as you’ll eat (!!!) Extra virgin olive oil ½ teaspoon lemon zest Salt & pepper Instructions
